Potato, chive and parsnip latkes

These tasty savoury cakes are much-loved in Israel and are a traditional treat during the Jewish festival of Chanukah. They’re fantastic as a starter or side dish.

Ingredients

400g potatoes

400g parsnips

4 eggs

small handful of finely chopped fresh chives, plus extra to garnish

1 level tbsp cornflour

salt and freshly ground black pepper

low calorie cooking spray

fat free natural yogurt, to serve

Method

Preheat the oven to 220°C/Fan 200°C/Gas 7 and line two baking sheets with non-stick baking parchment.

Peel and coarsely grate the potatoes. They will release a lot of starch, so rinse the grated potatoes well in a bowl of cold water. Drain, wrap them in a clean tea towel and squeeze out as much water as you can, then put them in a large bowl.

Peel and coarsely grate the parsnips then add to the potatoes along with the eggs, chives and cornflour. Season and mix well.

Divide the mixture into 20 portions using your hands and arrange the portions on two non-stick baking sheets.

Flatten each portion lightly with a spatula, lightly spray with low calorie cooking spray and bake for 15-20 minutes or until golden.

Arrange the latkes on a serving dish, scatter over the extra chives and serve with a bowl of fat free natural yogurt on the side.
